My Dandelions

Just like the dandelion, who's flower head contains many single seeds that the wind spreads across long distances, so too are My Dandelions. 
Wonderful women who, by spreading their knowledge, have impacted my journey (and hopefully others) towards a healthier life. 

Here, my Dandelions share some of their favorite recipes. I hope that through their sharing, you are inspired, as was I.


Immune Boost Lemonade
Makes one 8 oz serving.

  • 1/2 tbsp of Apple Cider Vinegar (Bragg's preferred)
  • 1 squeezed lemon
  • 1 tbsp raw honey
  • 1 tbsp Manuka honey (16+ or higher)
  • *Note, the apple cider vinegar may give you energy, so not great to drink in the evening.)

Sugar Free (no fake sweetener) Muffins
  • 1 cup Pamela's Baking and Pancake Mix
  • 3/4 cup coconut flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/4 tsp nutmeg
  • 2 eggs lightly beaten
  • 1 cup mashed ripe banana (or canned pumpkin)
  • 1/4 cup coconut oil
  • 1/4 cup apple sauce
  • 1/4 cup raw honey (may cut back if sweetened with the banana)
  • 1/4 cup palm sugar
  • 1/3 cup water
  • 3/4 cup add ins (e.g. chocolate chips (if so, cut back on honey), raising, coconut, berries, hemp seeds, flax seeds, chia seeds, goji berries)
Mix all dry ingredients. Mix wet ingredients, then combine together. Place in greased muffin tins or liners.
Bake at 350 degrees for 20-25 minutes.



Beet-Orange Juice
All ingredients are organic or local.
  • 3 oranges
  • 1 large beet
  • 6 carrots
  • 1/2 inch of ginger
  • 1 lemon
Juice all of the ingredients and enjoy!
But don't throw away the left-over pulp extracted from the juicer. Use it to make the recipe below!

Beet Carrot Muffins
Makes 12 small muffins.
  • 3 egg whites from cage free eggs
  • 1 cup of shredded beets and carrots (here's where you can use the pulp from your Beet-Orange juice above)
  • 3/4 cup organic cane sugar
  • 2 cups King Arthur unbleached white whole wheat flour
  • 2 tbsp Madagascar pure vanilla extract
  • 1 organic applesauce single serving cup
  • 1/2 cup olive oil
  • 2 tsp baking powder
  • 1/2 tsp sea salt
Heat oven to 350 degrees. Mix all of the ingredients together, then fold in beaten egg whites. Pour in greased muffin tins or liners and bake for 20-25 minutes. You may drizzle with honey once cooled.
